What you'll do The first step will be to show you the ingredients that you can find in all Oaxacan homes, one of the advantages of our experience is that we have a garden with herbs and organic chilis. Baldo my son will share his knowledge in mezcal. We have an extend variety of agaves and homemade creations that you need to try. An open bar of mezcal is waiting for you. Snacks? Of course but you need to do Oaxacan style which includes worms, chicatanas and chapulines. Fist course we will offer chileajo tostadas and fruit water. Have you heard anything about the metate and how tortillas are made by hand? Here we will show you how to make tortillas, tetelas and memelitas. One of my specialties is salsas made in a molcajete, we will roast the ingredients over charcoal and comal. In every class we make 4 to 6 salsas depending seasonal ingredients. The mole is the emblem of our cuisine and we will make one of the 7 moles from scratch using a metate, you can’t leave our home without tasting our mole negro, chocolate de agua, café de olla, nieves and a delicious cake. Everyone will participate in the different processes, cutting ingredients from the garden, making sauces and of course eating. As we arrive at Hierve el Agua, we will explore the whole area and look at Hierve from many different perspectives. You will have free time at the pools where you will have a chance to refresh and swim in the healing thermal (not hot) waters of Hierve el Agua, swim, meditate, or just contemplate the beautiful view of the valley below. There are many stories about this Natural Wonder. We’ll have plenty of time to enjoy this paradise. Wonder around, meditate, take pictures, relax, swim and we will then begin the 7 km hike down the valley to reach another secret hidden oasis! (a real waterfall unknown to most travelers, hidden inside an enigmatic small canyon). For most, it is the highlight of the day. Refreshing in these waters at the end of the hike will revitalize your body and mind. The Vegetarian Oaxacan Cooking Class, a class in English and Spanish, we will take a tour through a beautiful traditional neighborhood of Oaxaca, lend you a "chiquigüite and mandil" occupied to go to the market traditionally, we will take a tour of the Mercado neighborhood, we will pass the most beautiful churches and we will walk through parks overlooked by beautiful trees, pink, green and yellow quarry houses, I will show you beautiful parks of the colonial neighborhood and secret parks of this area of the city. In the middle of our tour we will meet some fresh organic vegetable and vegetable producers from a village near the city grown organically and harvested in the morning, then we will visit some producers in the neighborhood market, taste some snacks and buy some supplies for our Oaxacan vegetarian cooking class. Tacos and Secret Bars of the city
Traveling the city at night by car is an experience that fascinates me, the city changes and we can see different aspects of both visual and customs, I will show you some of the main old neighborhoods that are around the historic center (a bit far from downtown of the city), We will have 3 stops in 2 taquerias (which are changing day by day) and at the end we will go for a couple of beers in one of my favorite bars in the city, first we will find ourselves in a garden very close to the center (Conzati Garden), we will go up to my truck and we will go to the neighborhood of Jalatlaco (one of the oldest neighborhoods of Oaxaca) we will cross the area and we will go to the first taco stop of the night. I can tell you a little about the history of the neighborhoods or we can simply enjoy the music that we especially compile for this experience. Finally we will go to a taqueria in the neighborhood of Ex Marquesado and finally we will return to the center to have a couple of beers in one of my favorite bars in the city. For our mixology workshop what you should know is that the most important thing is imagination, we will start making our cocktail bases, for this the first thing we will do is talk about the history of mixology, its evolution and the new trend of reinterpreting the drinks in our communities. For this workshop we will have a wide variety of organically grown products, ranging from fruits, vegetables, herbs, aromatic plants, flowers, branches, exotic wood sticks and some other insects. We will start by presenting all the local products and talking about the history of each one to understand how a cocktail is built and interpreted. We will have a wide variety of glasses and bartender instruments that we will also present, we will give you a bartender apron and we will begin our experience. We will start with a basic bartender movement and how to move the Shaker. The workshop will be developed by stimulating your imagination and knowing all the possibilities of making a mixology such as a classic, a juice, an alcohol, a syrup, ice and a beautiful presentation. Mezcal trip
Our experience is an educational tour to get to know the mezcal culture and all the tradition that surrounds it. We will start our trip from downtown Oaxaca and visit the villages of Mitla and Matatlán. There we will take a walking tour through our majestic agave fields with thousands of specimens, where we can learn more about this plant, in addition to having enough time to do a couple of activities and of course the best photography. Then, we'll continue on to a mezcal factory to get to know the whole craft process of making our drink. At the end of the tour, we will have an unlimited tasting of different varieties of mezcal. Finally, we will share a traditional Oaxacan meal at a local restaurant, already included, and of course More Mezcal!

I am Mimi López Hernández and the first thing we will do is know the organic ingredients that we will use in our recipe; Then, between grasshoppers, cheese, snacks and a toast with mezcal, we will start the cooking class, so that our food is very tasty. Oaxaca is famous for its 7 moles, I will give you to taste all of them so that you learn to differentiate the textures, aromas and flavors; after that we will prepare the one you have already chosen. They are all exquisite! Visita las ruinas de Monte Alban
Pasaremos por los viajeros a su Airbnb o podemos vernos en en algún punto intermedio ,nos transportaremos en una van cómoda, A/C y de ahí nos dirigiremos hacia la zona arqueológica de Monte Alban a 30 min de la Cd., una de las ciudades prehispánicas mas antiguas de América y de México , pero con una de las vistas mas hermosas de la Oaxaca. Hare una visita guiada (1-1.30hrs) , compartiendo lo que mas me gusta del lugar , así como visitas a las tumbas , plataformas y espacios que normalmente no se visitan , y después contaran con tiempo libre para explorar y disfrutar del sitio .(1-1.30hrs o mas )
Biking to The Ancient Tree of El Tule
Oaxaca's FAVORITE ride. A must do while you're here! I will be your local guide during this beautiful and safe bike ride to see the massive and ancient "El Tule" tree, which is famous for being the WIDEST tree in the world. We´ll also see part of the town of "Santa Maria del Tule", its church and its market. We'll meet in downtown Oaxaca. Then, once we are geared up with helmets and bikes, we´ll begin our journey to El Arbol del Tule (45 min. bicycle ride from downtown [10 km or 6 miles one way]). We'll ride on a nice bike lane covered with tree shades for the most part. It's mostly flat. We'll start biking out of the city first, then towards the outskirts with views of beautiful hills, and crop fields. Once we arrive to Santa Maria, we'll go directly to see El Tule tree, the colorful church and the beautiful lush gardens. Then, we'll go to the food market where we'll spend some time hanging out and getting something to eat and drink. Finally, we'll start our ride back to Oaxaca. REQUIREMENTS: - To know how to ride a bike (easy / flat ride, 20 KM total). - MINIMUM height is 1.53 m / 5' 0 ft. WHAT´S INCLUDED: Bike, helmet and on-the-go repair tool kit. *Bikes provided are mine (not rentals), well maintained to offer a great riding experience. The Hierve el Agua Experience
This is an ulltimate experience that takes you to explore Hierve el Agua, textiles, dyes and mezcal! We begin our experience meeting at the Temple of Santo Domingo de Guzmán to explore three different villages throughout the valley of Oaxaca. First to our textile village of Teotitlán del Valle. This village is well known for the elaboration of wool rugs and for using natural dyes to obtain all their colors. We will enter the home of one of our zapotec families from Teotitlan that will show and explain to us the whole process within the elaboration. Later we'll do a 1 hour drive to Hierve el Agua where we'll have a delitious local meal before we begin our hike. The hike last 1 hour 30 min and it takes us to an incrédible view of the petrified waterfalls (Make sure to bring comfortable clothes and shoes with you). The hike is not an obligated activity, you may also enjoy the whole time in the pools. We'll be having lunch in this site. We'll also have some mezcals in the World's capital of Mezcal, Santiago Matatlàn. Where we visit a palenque and you get to see the whole process and taste the different mezcals that are made in Oaxaca. Tour includes, entrance fees, food, drinks and transportation. Take a Mezcal Tour, with CONVITE
Get ready to learn all about agaves, mezcal production and culture alongside experts in the field. Beyond the myths, you’ll get to know our palenque and the culture surrounding one of Oaxaca’s greatest mezcal brands. Your entry point will be at Casa Convite, located at the heart of Oaxaca City, where we’ll greet you with an introduction to requirements and regulations. Our next stop will be Tlacolula, where you’ll be able to appreciate the colours and flavours of one of the oldest traditional markets on the continent. Whilst we're here, we'll buy some fresh local ingredients to prepare later on for you so that you can enjoy a typical regional meal. Afterwards, we’ll head to the CONVITE palenque. Rather than being a site for superficial explanations of the production process, our palenque is fully working and operational, meaning that you’ll be able to live the real experience of a day’s mezcal production, and of course not without the chance to enjoy fresh mezcal alongside some of the most famous mezcal maestros in a traditional tasting session. Following this, we’ll make our way up into the Zapotec mountains, where we’ll be able to appreciate wild agaves in their natural habitat at 2000 metres above sea level. This breath-taking landscape also allows for a fantastic opportunity for those looking to photograph the scenery. We’ll then make our way back down to the palenque where we'll prepare you a typical mezcalero lunch. Amongst the smoke and the comal oven we’ll sit together and share many more secrets of mezcal culture. With these experiences you’ll find your appreciation transformed and ready to distinguish and identify an authentic mezcal!
Hierve el Agua HALF-DAY
Behold the stunning beauty of the petrified waterfalls of Hierve el Agua that were formed thousands of years ago by the runoff of calcium carbonated water. Fully guided in both ENGLISH and Spanish. This is the perfect way to visit Hierve el Agua, hike around the waterfalls and relax at the pools WITHOUT the addition of UNNECESSARY stops to actually see the place up and down with no rush. We'll meet in downtown Oaxaca. Then, we´ll begin our journey to Hierve el Agua (1:40 hr. drive [70 km]). Once we arrive, we´ll start the hike to the petrified waterfalls, go to the most amazing viewpoints, hike down to the base to see them from below and appreciate its stunning beauty. We´ll continue the hike and come back up to spend some time relaxing in the natural pools where you can dip your feet or even go for a full body dive. We´ll finish off trying delicious food at one of the local food vendors in the site. Then, we´ll drive back to Oaxaca. There we can have a quick and small breakfast at the local market. 10:00 going to Hierve el agua , 60 min on dirty road to get to top of the mountain , where hierve el agua Is - Once we get to Hierve el Agua, we are doing this trail path to the bottom of the petrified waterfalls , thats the Best View of Hierve el agua. Then we Wil climb the waterfalls directly to the pools. Its just 1 mile walking. (If you don want to do It. We just can go straight to the pools) - 13:30 pm We sit down to eat , right there in Hierve el agua, typical Oaxacan food. Memelas, eggs, mole, etc. The menu is diverse and has everything for everyone. -14:00 hrs we will move to Matatlan, the world's mezcal capital. There, we will take a 2-hour tour in a mobile barrel that will take us to the maguey fields, we will take a lot of photos, you will write your name on a Maguey Leaf and drink mezcal on a very unique way. _ We´ll visit a local PULQUERIA, and we will try different agave distillates. Nuestra aventura comienza en el centro de la ciudad de Oaxaca con rumbo a Matatlán, pueblo mejor conocido como: "La capital mundial del mezcal" al ser el mayor productor de esta bebida en todo México. Ahí visitamos una destilería artesanal para ver de cerca la producción tradicional del mezcal. Nuestro objetivo es aprender todo el proceso paso a paso y valorar todo el esfuerzo qué hay detrás de esta bebida. En nuestro recorrido tendremos la oportunidad de ver áreas privadas, que normalmente están restringidas, como una cava de reposo y añejamiento; o incluso áreas de envasado en donde podrás participar y ser parte importante del proceso. Después de aprender cómo se elabora el mezcal, realizamos la degustación, la cual es ilimitada! Ya que podrás probar tanto como desees! Then, we'll continue on to a mezcal factory to get to know the whole craft process of making our drink. At the end of the tour, we will have an unlimited tasting of different varieties of mezcal. Finally, we will share a traditional Oaxacan meal at a local restaurant, already included, and of course More Mezcal!

During this experience, immerse yourself in the fascinating world of mezcal with a mezcal tasting. First through a theoretical class on mezcal history, its evolution, the different types of mezcal, the different types of agave and then through a practical part, the tasting and enjoying of different traditional mezcals produced by our own distillery called Casa Alejandro de la Vega, located in the largest state of mezcal producers: OAXACA. In the end, your knowledge of mezcal will allow you to learn more about the industry.

Welcome to my home, your home! I am Mimi López Hernández and the first thing we will do is know the organic ingredients that we will use in our recipe; Then, between grasshoppers, cheese, snacks and a toast with mezcal, we will start the cooking class, so that our food is very tasty. Oaxaca is famous for its 7 moles, I will give you to taste all of them so that you learn to differentiate the textures, aromas and flavors; after that we will prepare the one you have already chosen. They are all exquisite! Do not forget that you will be involved in all the processes so that you know the cultural meaning of each one, you will learn to make tortillas by hand and put them on the comal so come ready to participate and eat! After that now if at the table, we will eat together what we prepare. A dessert? of course, you can choose between sweet apple, rice pudding or canned pumpkin. Authentic Oaxacan food cooking class
We will move to a town 20 minutes away from the city, there you will meet our house and we will cook. First we will drink a delicious chocolate and then we will start cooking. You will know my grandmas recipes and with the help of my mother, who is very experienced in traditional cooking, we will prepare traditional dishes from Oaxaca. I will show you the ingredients that will be used that are organic and harvested by locals, you can taste and know Oaxaca´s natural ingredients. You will discover the most traditional dishes of Oaxaca you will be surprised with the most delicious flavors. I will tell you the history of each meal and why they are so important in our gastronomy. And we'll eat tortillas that you can make by yourself, I'll show you how to make them in a real clay comal, I assure you it will be a lot of fun! We will all cook and have a "mezcalito" and share stories and the beautiful traditions of Oaxaca while we eat what we prepare. The Vegetarian Oaxacan Cooking Class, a class in English and Spanish, we will take a tour through a beautiful traditional neighborhood of Oaxaca, lend you a "chiquigüite and mandil" occupied to go to the market traditionally, we will take a tour of the Mercado neighborhood, we will pass the most beautiful churches and we will walk through parks overlooked by beautiful trees, pink, green and yellow quarry houses, I will show you beautiful parks of the colonial neighborhood and secret parks of this area of the city.
