What you'll do

In The Real Oaxacan Cooking Experience, after drink a nice coffee and introduce ourselves and the Oaxacan traditional cuisine to you, we will choose the menu for the day, then We will walk to the Xoxocotlan local market to select and buy the freshest ingredients for our fantastic Oaxacan feast.

(Markets is 3 minutes walk) then, back at the kitchen, i will show you how to process masa to make fresh tortillas, quesadillas, tacos, tetelas and empanadas stuffed with fresh quesillo, squash blossoms, mushrooms and much more, also i will show you how to cook a spicy red sauce and mild green tomatillo soft sauce with ingredients picked from our organic farm to enjoy our appetizers on a nice set table.

After enjoy snacks we will start to cook a real Oaxacan 3 course meal (soup, main, dessert) It could be; Mole Amarillo or Costillas en Salsa Verde (fried pork ribs on tomatillo sauce) or mole Encacahuatado (peanut mole) and much more. Choose your own mole adventure!

We will go to the mill to process our mole & horchata water. You will also choose what dessert you want to make like; rice pudding, or fried plantain moletes with cream chesse or more options to choose from,

Sip a nice mezcal and refresh yourself with a beer enjoying a real traditional oaxacan feast under the shade of the trees

My farm to table house is located 10-15 minutes away from oaxaca downtown in public transportation, Enjoy our farm, outdoor kitchen/ big garden surrounded by large palms, organic frutal trees, and our friendly farm dogs. Our neighborhood market is nice, small & clean Full of folklore and colors, we can find all what we need to create our amazing Oaxacan feast, also is full of nice local people happy to help to find our ingredients

    This was a great cooking class! We’ve been to several and really enjoyed this class. Mike is so open to helping you get out of the day what you want and invites you to be creative as you cook. It was interesting to hear his background with food and know more about Oaxacan cooking in general. We loved going to the market and everything we made was delicious. The space is a beautiful outdoor kitchen and Mike’s backyard is a lovely place to spend the day. We also really appreciated Vicky and Jessie (sorry if I spelled it wrong!) for everything they did to make the day so special. Thank you!

    exciting personality makes everything better: well traveled both understands pre hispanic and contemporary approaches ..we went Twice to local mill, first for our masa, second for our mole; salsa ( same ingredients) boil, fry, grill and char, much more...pressed a whole zucchini flower outside a tortilla to fold; or chop huitlacoche & epazote into masa, or simple too: in sum, he introduced us how to use the basics into what was special available or practical. a true chef and an engaging teacher: Cannot forgot his exceptionally kind wife Jessica: she and her team helped in every possible way/ all the dirty work and she is truly lovely

    So much fun!! Such a great experience for doing some hands-on cooking with local ingredients making amazing and delicious food. Miguel is such a warm hearted gentleman who is very passionate about food 🙏🏼

    This was a very memorable experience for our first cooking class in Oaxaca. Miguel was a wealth of knowledge his farm was incredible definitely would come back and have already recommended to everyone we met after.

    We had high expectations but they were surpassed in all ways. The farm and garden are amazing and the perfect place to learn about, make and eat authentic Mexican food. We really appreciated the time he took to explain his vision on Mexican cooking and simplify what many claim to be complicated. There was plenty of food, and also plenty of time to enjoy it with some drinks in the beautiful garden. Would definitely recommend!

    Highly recommended cooking class. Learned cooked and ate lot in a day. The class was very structured and informative. We had a smooth pickup and drop off at the end. Great experience with the chef and his whole team!
